Short label.
Long process.

AA–AAA

Canadian graded beef. The good cuts, trimmed lean before they go in the marinade.

3 steps

Marinated, then smoked, then dehydrated. Most jerky skips at least one.

His own

Every recipe is Anthony's. You won't find these flavours anywhere else.

No MSG

The flavour comes from the marinade and the smoke.

No nitrates

Nothing added to fake that "cured" colour.

No refined sugar

No white sugar, no corn syrup.

How it's made

Three steps.
No shortcuts.

01

Marinate

Lean strips soak in Anthony's own marinade. Each flavour has its own recipe, built from scratch.

02

Smoke

Into the smoker. This is where the deep, smoky taste comes from.

03

Dehydrate

Dried slow, rack by rack, until it's tender with a good chew. Then weighed into 100 g bags and sealed.

Step 03 · every rack full
AAAAAAPrime

What AA to AAA means. Canada grades beef by marbling. AA and AAA are the grades you buy as steak at a good butcher. Lots of jerky uses whatever is cheapest. This doesn't.

Questions

Good to know

How big is a bag?

Every bag is 100 g. Every flavour comes in the same size.

How does the 4-pack work?

Any 4 bags cost $55 instead of $60. Mix flavours however you like. Add 8 bags and you get two 4-pack prices. The cart does the math for you.

What's the special edition?

Hot Hot Hot Honey-Cured Heat. Anthony makes it in small runs when he can. When it's gone, it's gone until the next batch.

Is it really no MSG and no nitrates?

Yes. None added. The taste comes from the marinade, the smoke and the beef.

How long does it keep?

Keep it sealed in a cool, dry place. Once you open a bag, eat it within a few days. Most people finish it the same day.

Do you ship outside Alberta?

Right now we ship to Alberta only. More provinces are coming.
